Little Frittatas in Tomato Sauce

How to make something special with few ingredients

A very popular sauce and very popular practice but an unknown way to present a frittata, it was a Sunday recipe in southeast Sicily. Thanks to my Mum who suggest this recipe


  • 3 eggs
  • a spring of parsley 
  • 1 onion
  • Extravirgin olive oil
  • Salt and Pepper
  • 100 gr di Pecorino Cheese
  • 500 gr of tomato sauce

How to make the little frittata

We prepare our frittata mixing with a fork in a bowl all eggs and all the Pecorino.

Extravirgin olive oil or a regular Vegetable oil on the pan to cover all the bottom of that, usually around 4 tablespoon

Using a tablespoon move the mix (eggs and chees) on the frying pan when the oil is hot enough. Flip them when they gold well. When they are ready just keep in a dish aside

Now we are ready to make our sauce: cut half of a regular round onion and move in a pan with 2 tablespoons of extra virgin olive oil, when the onion gold add the tomato sauce and half cup of water and leave until the sauce became thicker. Around 10min low flame

When the sauce is ready you have just to move the little frittatas already prepared in the tomatoes saucepan and stir just for one-two minutes,
