Many cooking classes in Sicily take place in cities. Often they start with a visit to a local market, followed by a cooking session in an apartment or urban kitchen. Those experiences can be enjoyable and lively.
Our approach is different.
At Three Farms Island, we love that the cooking class happens in the countryside where we live and work, surrounded by olive trees, gardens, and the agricultural landscape of the Val di Noto. For more than twenty years this farm has been our home. Cooking here is not a staged activity—it is part of everyday life.
Ingredients Before Recipes
Our cooking classes are built around a simple principle a simple came from our Farm approach: ingredients come before recipes.
This idea may sound obvious, but it is actually the foundation of Italian and Mediterranean cooking traditions. Many of the dishes we prepare together belong to what Italians call cucina povera—traditional rural recipes created with simple, seasonal ingredients. Not so easy to find everywhere, trust us.
At first glance, it might seem almost paradoxical to teach this kind of cuisine in a cooking class. These are dishes historically born out of necessity, made by farmers and families using what was available.
But this is precisely why the quality and origin of ingredients become essential.
Cooking these recipes in the countryside, close to where the ingredients grow, allows us to understand them in their natural context. Vegetables, herbs, olive oil, grains, and seasonal produce are not abstract components on a recipe list—they are the starting point of the entire culinary process.
During the walk we will have possibility to see and harvest some ingredients according with the season .This direct connection between land and cooking is what defines our approach and distinguishes this experience from traditional cooking classes held in city kitchens. Market is here 🙂

One aspect we always like to emphasize is the idea of cooking together.
This experience is not only about celebrating a meal and sharing it around the table, but also about preparing it together, step by step. The act of making food collectively is an essential part of our cooking class, and something we value deeply.
After a short walk around the farm, we usually begin with a small appetizer. While sipping a glass of our wine, we start preparing the first dishes together.
What we cook always depends on the season and what we find in the garden that day. From there, we move slowly through the preparations, cooking step by step, sharing stories, talking about where the recipes come from, and exploring the traditions behind them.
The agricultural context around us naturally becomes part of the experience. Being on a farm helps us understand not only the recipes themselves, but also the ingredients and the landscape that shaped them.
We will learn how to prepare a traditional dish together, always open to your questions and requests. We cannot wait to show you our way of cooking — the same philosophy we express in our Manifesto.
Sharing the Meal
After cooking, we all sit together at the table.
The meal we share includes the dish we have prepared together during the class, but it is also part of a generous tasting menu that reflects the farm’s seasonal kitchen. Some dishes are cooked together step by step, while others are prepared by us in advance and served during the meal, allowing guests to experience a wider range of flavors and ingredients.
Around the table, the experience naturally continues.
We taste, we talk, we open a bottle of our wine, and we share stories about our land, our ingredients, and the traditions behind many Sicilian recipes—especially those humble dishes of cucina povera that often come from very specific places and histories across the island.
There is always time for questions, curiosity, and conversation. We are always happy to share what we know about the ingredients we grow, the recipes we research, and the rural traditions that continue to shape Sicilian cooking.
