Baked Onions with Caciocavallo, Rosemary and bay leaves

Onions are a staple in most kitchens, and for good reason. They are versatile and add flavor to almost any dish. Baked onions are a simple and delicious way to enjoy this staple vegetable.

Here’s what you’ll need to make at home:

Ingredients:

  • 4 medium yellow onions
  • 4 tablespoons of Extravirgin Olive Oil
  • 1 cup of grated Caciocavallo or Pecorino cheese
  • 1/2 teaspoon of freshly ground black pepper
  • 2 tablespoons of chopped fresh rosemary
  • A few bay leaves
  • Salt to taste

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper.
  2. Cut the top and bottom off each onion, then slice them in half from top to bottom. Remove the outer layer and any tough layers, leaving the soft inner layers intact.
  3. Stir in bawl the Pecorino cheese, black pepper, bay leaves and rosemary with onions and olive oil
  4. Place the onions in the prepared baking dish
  5. Bake in the preheated oven for 25 to 30 minutes, or until the onions are tender and the top golden brown
  6. Serve hot, garnished with additional grated cheese and chopped rosemary if desired.
