“Vota Vota” the meaning in the action

Maybe the expression Calzone is not correct for this kind of pizza, my Neapolitan friends will forgive me for this. Calzone is the famous Neapolitan pizza style where you turn a regular flat pizza, in the action, but just to explain easily what we are talking about we can say the action to do calzone it’s exactly the same for one of the traditional Sicilian Calzone called Vota Vota.

“Vota” in Sicilian language means to “turn” to “fold” this is why we call it “Vota Vota” because we turn twice. Simple, isn’t it?

Typical in one area of Sicily, Sicily southeast, this kind of calzone have is own rules and recipes for be made properly.

At first, a different kind of flower, Sicily is the place where the most used flour, also for typical pizza, is Semola di Grano Duro. Second, the way how we fill it, in this recipe, we explain how to make your “Vota Vota” with vegetables, wild or regular chard.

INGREDIENTS:

600gr flour (use durum wheat flour)

0,3 lt of water

1 gr yeast

1 little spoon salt

1 spoon extra virgin olive oil

for inside:

wild or regular chard

onion

sun dry tomatoes

Adding warm water to the flour with the yeast, then start to mix with hands for some minutes till the dough became compact, after that, cover the dough and wait 12 hours.

After, roll out the dough and put in the middle what you prepared before.

In this case we made it with a tablespoon of Olive oil with Onion or garlic until start to sweat, after adding the chard we boiled and dry before. Tost it just for 2 minutes.

Consider the possibility to fill it how you like, are you thinking Mozzarella and Tomatoes?

Now cover “Vota” like in the pictures and just a spoon of extra virgin olive oil on the top smeared by hand. 

In the oven at 200° for 20 minutes
