Just a small light Sicilian summer menu

Many of our wonderful recent guests have asked us for the recipes of our dishes. This puts us in a bit of a quandary, especially at this time of year, as the recipes are extremely simple. However, one thing is decisive – everything comes directly from our garden. And that is what makes all the difference.

Anyway, we are happy to share here the recipes of our simple dishes that perhaps many of you have also tasted during a visit to us. While the preparations may be straightforward, the flavors are anything but ordinary, thanks to the fresh, homegrown ingredients we use.

Sicilian Potatoes Salad

Boil the potatoes until tender. (just a bit overcooked) As soon as they are ready, peel them and season with:

  • Salt
  • Red wine vinegar (we use Nero d’Avola)
  • Extra virgin olive oil
  • Dried oregano

Tomato Salad

When summer arrives and the tomatoes are at their freshest, sweetest, and most flavorful, it is the perfect time to celebrate this beloved fruit.

In Italian, “pomo” means apple, and “d’oro” means made of gold – a testament to how warmly this New World import was welcomed, especially in southern Italy where it thrived.Here is the classic Sicilian recipe for our tomato salad:

We chop a variety of tomato types – San Marzano, ciliegino, datterino, cuore di bue, or piccadilly – and leave them to marinate with some chopped onion, salt, and extra virgin olive oil for about an hour outside the fridge. Then we add dried oregano and serve.A simple bruschetta or crusty bread is the perfect accompaniment to this feast of fresh, vibrant flavors.

Arugula and Bean Salad

We cook the beans the night before – about 2 cups worth. To serve, we combine the cooked beans with:

  • Approximately 30 leaves of arugula (note that wild arugula can be quite peppery, so a conventional variety may you can use around 1 cup)
  • A chopped lemon, a juice of another one
  • Salt and pepper to taste
